Satur Day

Is it day 46? Who knows lol!

I don’t usually post on the weekend because I don’t go online since I’m online allllll day at work!

Today I weigh: 71.2, 11.4 & 157.8.

So a 1.8 lb loss!! Nice one!

Pleased with this and I did not get tempted by any of the amazing cakes my sister Fran made for her daughter Anna’s 1st birthday. Everyone was impressed that I didn’t crack either, especially when she brought out the brownie cake. Droool….

I did make some chocolate muffins just before I  left and ate a boiled egg and some chicken.

Now, you may have been impressed with my chocolate cake, but these muffins were heaven! I recommend you try them. Quick and easy.

And since I poured the mixture into a 12 mini muffins tin, I can have 4 a day if I wanted. This would be my oat bran serving for the day though.

Heres the recipe:

11g of Baking Powder
50g of Hot Chocolate powder (Low in fat)
30g of Cocoa Powder (Low fat)
2 eggs
6tbsp of oatbran
One cup of milk
Sweetener (I used 5 tablespoons because my sweetener isn’t that sweet. Use your sweetener according to taste)
Mix all of the ingredients (minus the milk) together into a paste. Slowly add the milk and mix more. (if you feel like it is becoming too liquidy, stop pouring in the milk!)
Set the oven to 170 degrees Celsius and cook for 20-25 minutes.
If eating on the 2nd day, warm up your muffin for 10 seconds in the microwave.

This was the easiest and most straight forward recipe, plus you only need 2 eggs and as I eat them for breakfast every day (eggs not muffins, though I could change this 😉 )I don’t want to be consuming loads!
Well, apart from that I’m glad its the weekend!! Got some prawns in the fridge so off to find a good recipe as I’ve not cooked them much.

    WOW thats a great loss Shannon! Congrats. Changes on the scale really help when you’ve got cake and brownies to resist! I definitely think I will give those muffins a try xoxo

      Thanks! I also had my hair trimmed this morning and I have such thick hair I should have a loss tomorrow too lol!! Yeah do try the muffins, soooo good. I put in about 6 tablespoons of an aldi sweetener I bought. 🙂
